Pellet Smoked Pork Loin

You do not have to spend tons of time or money to make a delicious, moist pork dinner that is sure to knock your socks off!

PREP TIME:

10-15 minutes COOK TIME

2-3 hours

Ingredients

1 pork loin

Yellow mustard

Killer Hogs the BBQ Rub

Smoked chipotle powder

Directions

Preheat smoker to 225 degrees

Lightly coat the exterior of the pork loin with yellow mustard/binder of choice

Season the exterior on all sides of the pork loin with the rub of choice and finish with a light coating of the chipotle powder

Place on smoker and smoke till internal temp of 125 degrees (if you have multiple racks I prefer to keep on bottom rack as the extra temp from the drip pan helps with the crust from the bottom)

Turn pellet smoker temp up to 450-500 to build crust (ensure you are working with a clean smoker/drip pan or this stage can cause flare-ups!)

Continue cooking until internal temp reaches 145 degrees, pull and rest for 10 minutes before slicing

My thoughts on this recipe...

I had seen this done on a famous BBQ YouTubers page and as most of the other foods I cook go, I had to try it. It was relatively simple, and I have made a bunch of these as it is quick and simple and has leftovers as well that we reheat in the air fryer. Doing the final step of cranking the smoker up to get the hard crust is not a necessary step, but I feel it gets you a better look and taste.
